Food: Vancouver's best restaurants
How Vancouver became Canada’s hottest dining town.
In a seafood-obsessed city, few places do it better than Blue Water Cafe + Raw Bar (shown, 1095 Hamilton St., 604-688-8078, bluewatercafe.net), where sustainable, sweet Dungeness crab is paired with flying squid, chickpeas and spicy harissa, and the oyster bar offers a vast West Coast selection. Vij’s (1480 11th Ave., W., 604-736-6664, vijs.ca) is quite possibly the best Indian restaurant in the country. Try the coconut-curried vegetables and the wine-marinated lamb Popsicles, and save room for superb rice pudding. After almost 25 years, Bishop’s (2183 West 4th Ave., 604-738-2025, bishopsonline.com) remains the place for upscale West Coast comfort food, like poached scallops with a zippy grapefruit-and-fennel salad and a terrific roasted-rhubarb shortcake with a sweet butter biscuit and pastry cream.
