Event planner Scott Waring of Kindred Spirits Catering & Event Planning (kindredspiritscatering.com) plans a Breakfast at Tiffany’s–inspired fete.
Holly Golightly Lo Mein Noodle Salad- 1/4 cup honey
- 1/4 cup soy sauce
- 1 teaspoon sambal olek, or to taste
- 4 teaspoons sesame oil
- 1 pound lo mein noodles, cooked until tender and refreshed in ice water
- 1/2 cup green onions, thinly sliced and cut on the bias
- 1/2 cup bean sprouts
- 1 cup sugar snap peas, blanched
- 1/2 cup carrots, thinly sliced
- 1/2 cup cucumber, peeled, seeded and thinly sliced
- 1 cup toasted cashews, lightly crushed
- 3 tablespoons fresh cilantro, chopped
- Sesame seeds to taste
In a small bowl, whisk together honey, soy sauce, sambal and sesame oil. To the noodles, add green onions, bean sprouts, sugar snap peas, carrots, cucumber, cashews, cilantro, sesame seeds and the soy mixture. Mix thoroughly.
