Late-night debauchery calls for rich colours, lusty libations and easy eating. {HOLIDAY GUIDE 2008}

Charcuterie—cured meat, artisanal cheeses and salty, one-bite nibbles—is the way to go for a late-night feast. Pair with local, microbrewed ale, pilsner or stout. Kurtis Kolt of Vancouver’s Salt Tasting Room suggests these must-haves:
Smoked pork tenderloin with Guinness mustard (four parts grainy dijon, one part Guinness) on crackers or bread
Spicy sausage (like chorizo) with olives and shaved manchego cheese
Fennel salami with quince paste or apricot jam.
