And over at the chef’s table…
Meanwhile, more disciplined wine devotees had the option of attending seminars and events held in some of Whistler’s most glamorous mansions. One such event was the Chef’s Table Luncheon, hosted by Anthony Nicalo (left) of Farmstead Wines (farmsteadwines.com). Forty guests were treated to dishes such as goat’s milk panna cotta with roasted beets and Renato Fenocchio olive oil; Campbell’s pheasant, chestnut polenta, cavolo nero and wildberry sauce; and toasted brioche with local apples, whipped mascarpone and honey. Each course was paired with a naturally farmed, handcrafted wine produced on a small, sustainable farm—one of Farmstead’s mandates.
