How Vancouver became Canada’s hottest dining town.
Vancouver’s claim to fame used to be that you could golf in the morning, kayak in the afternoon and ski at night. Fun, I suppose, if you’re into that kind of thing. Although the city retains a sporty air—witness the impending 2010 Olympics—it is gaining a new and decidedly sexier reputation as Canada’s best food city. You can have waffles topped with lavender milk chocolate in the morning at Café Medina (556 Beatty St., 604-879-3114, medinacafe.com), fish tacos in the afternoon at Go Fish (1505 West 1st Ave., False Creek Fisherman's Wharf, 604-730-5040) and braised-short-rib burgers at night at Nu (1661 Granville St., 604-646-4668, whatisnu.com). Now that’s a reason to celebrate.
A number of factors combine to give Vancouver the edge over Toronto and Montreal when it comes to great restaurants. The climate helps; the long growing season means farmers and producers can provide high-quality fresh ingredients nearly year-round. The proximity to the Pacific gives easy access to incredible seafood. Mass immigration from the near and Far East in the ’80s and ’90s brought new flavours, techniques and cuisines to the area. And the phenomenal success of the province’s wine region has brought a real sense of pride, allowing for an easy sophistication around the subject of food and drink.
Mix it all together, and you’ve got the recipe for some of the most exciting food in the country.
